Fresh Lentil Salad with Vegetables

Ingredients

  • Panama Mill Lentils, cooked in salted water
  • Chopped cucumber
  • Chopped red onion
  • Sweet corn from Doña Verona
  • Cherry tomato, halved
  • Chopped red bell pepper
  • Chopped fresh parsley
  • Chopped fresh cilantro
  • Olive oil from La Parmesan
  • Lemon juice
  • Salt and pepper to taste

Preparation

  1. Cook the lentils in salted water until tender. Drain and let cool slightly.
  2. In a large bowl, combine the lentils with the bell pepper, cherry tomatoes, cucumber, corn, cilantro, and parsley.
  3. Add salt, pepper, lemon juice and a drizzle of olive oil.
  4. Mix all the ingredients well and serve chilled.
