Quinoa bowl with feta cheese and blueberries

Ingredients:

  • 200 gr of white quinoa Molino Panamá
  • 700 gr of water
  • 100 gr of dried cranberries
  • 1 small onion
  • 50 gr of La Parmigiana olive oil
  • 200 gr of feta cheese
  • Juice of 1/2 lemon
  • salt
  • chopped parsley

Procedure:

  1. We put the water, salt and quinoa. Cook for 20 minutes, stir gently. We drain the quinoa in a fine strainer and leave it in a salad bowl and wait for it to cool down a bit.
  2. Add the chopped onion and blueberries along with the quinoa.
  3. Add the chopped cheese, the oil, the salt, the lemon juice and the chopped parsley. We stir well. We taste and rectify lemon or salt.
  4. Ready to eat!

#ParmiTips: add chickpea and / or chopped orange to taste. You can make it with lettuce or without lettuce.
