Ingredients:
- 200 gr of white quinoa Molino Panamá
- 700 gr of water
- 100 gr of dried cranberries
- 1 small onion
- 50 gr of La Parmigiana olive oil
- 200 gr of feta cheese
- Juice of 1/2 lemon
- salt
- chopped parsley
Procedure:
- We put the water, salt and quinoa. Cook for 20 minutes, stir gently. We drain the quinoa in a fine strainer and leave it in a salad bowl and wait for it to cool down a bit.
- Add the chopped onion and blueberries along with the quinoa.
- Add the chopped cheese, the oil, the salt, the lemon juice and the chopped parsley. We stir well. We taste and rectify lemon or salt.
- Ready to eat!
